美山荘だより

本年から　本格的に夏のキノコを使うようになりました。　今は、ポルチーニ（国産）・赤山鳥茸・たまご茸・杏茸・アメリカイロガワリ・むらさき山鳥茸、、、　　　これらのキノコをそれぞれに調理し、すっぽんのスープに絡めました。　後は、生姜と自生の三つ葉をちらした貴重な美山荘らしい一品に仕上がりました。　　とても美味しいと評判をいただいております。　美山荘の夏の新たな楽味です。　　　　　　　　　４代目俳

The New Summer Taste.

We have started to use Japanese Summer Mushrooms sinse this year,including Japanese porutini.

We season them separately beforehand,and finish with soup of a snapping turtle.

We have a good reputation for this dish.
